Can anyone recommend a good one that's really sharp and will cut nice thin slices of beef etc?

It depends on how much you want to spend. Here is a list of some, from the expensive, to the cheap, that you might want to look at as a rough guideline: www.independent.co.uk/extras/indybest/food-drink/best-carving-sets-8842538.htmlI bought my wife this one, which she really likes, and uses it for cutting up meat all the time, and as long as it is kept sharp, it can cut thin slices. But, it is not a set like the ones mentioned in the article. It is £85, and very sharp, you have to be very careful and follow the sharpening instructions carefully.

Thank you mikebird, I've been looking into Japanese type knives versus the traditional european ones, bought a Sabatier one years ago from Harrods and quite frankly it's rubbish, the blade is far too thick.Truly my head is all over the place, should I buy a 'Granton' edge knife which all the manufactures suggest now, or go for the REAL Granton knife which is ridiculously cheap but has the patent on the product and a lot of butchers use.Then of course how do you sharpen them and what with? Bloody nightmare if you watch youtube, they all have different ideas. 2mo5pow

Steels are not really for sharpening Miranda but more for honing them, if your knife is blunt it won't touch it.OH has even tried to sharpen ours on a wet stone he uses in his workshop but they're past redemption.

I bought my wife this (knife)... If I bought my wife a kitchen knife she'd stab me to death with it, claim diminished responsibility, and probably get away with it.
