On the BBC's Points of View messageboards, before the final clampdown there was a thread on notable covers, including the likes of “All Along the Watchtower” by Jimi Hendrix (original by Bob Dylan) “Blinded by the Light” by Manfred Mann’s Earth Band (original by Bruce Springsteen) “I Will Always Love You” by Whitney Houston (original by Dolly Parton) and, notoriously because many, including some newspapers believed she wrote it. "Make You Feel My Love" by Adele (original by Bob Dylan) Any more that you know and like?

Well, IMV, the supremo where covers are concerned is Will Young.
My particular fave is Careful, originally by Horse.
Also Hey Ya >>>>
And How Will I Know ...
And finally, for the WWF, What The World Needs Now ...
Can you tell I'm a bit of a fan!

Another "Young" fan but this time Paul!
His version of Marvin Gaye's Wherever I Lay my Hat (that's my Home) is a classic.
Another good one is his and Clannad's version of Judy Collins' Both Sides Now
He also did a good version of Crowded House's don't Dream it's Over. The original had all but been forgotten about until Paul revived it and then both his cover and the original version started being played on the radio.
Now, ironically, you only hear the Crowded House one and not Paul's version.
Also Everytime You Go Away originally by Hall and Oates.

Love Gladys Knight's version more than Marvin Gaye's.

Boulder to Birmingham
The original by Emmylou Harris
Dolly Parton recounts how Emmylou Harris wrote it, and played it for her just after the death of Gram Parsons.

Anyone familiar with Walk off the Earth? They do some amazing covers, often with humour as well as talent.
