Last night I was pleasantly surprised by an 'Iceland' ping meal - spaghetti and meatballs. It was only a quid, and I enjoyed every mouthful!

I have decided to make spanish omlettes for dinner today. I had a pack of lardons to use up, plus a couple of sausages and half an onion. I've prepped it all (ie chopped and fried it off). I will reheat it as and when people are ready for me to add the eggs. It's supposed to have a chopped potato in with it, but I don't think there'll be room in the pans. So if they want any carbohydrates, they'll have to make do with bread. Personally, I shall have a mushroom omlette.

Sounds a bit too dry for me, Bobbie - I had a Weetabix for brekky as well this morning, but was boring and just covered it with milk
Tonight have enjoyed another 'ping meal' - a reduced M & S Chicken & Vegetable Chow Mein..

I had a lovely beetroot and avocado salad for tea last night. Chopped fresh boiled beetroot. diced avocado., spring onions, cucumber, some small plum tomatoes quartered, and sweetcorn. I used a locally made lemon and thyme rapeseed oil as a dressing. Served it on a bed of iceberg lettuce. Even hubby ate it and he isn't keen on avocado.
